Buffalo Chicken Dip

Believe it or not lunch for me is the hardest thing to come up with.  You don’t want a full meal because its lunch, and you don’t want something that is too light that you are snacking throughout the day.  You know we are all trying to limit the quarantine 15 – LOL.  My buffalo chicken dip is light yet filling, and you can eat it for a few days with your favorite healthy side like veggies or pita chips.  Let’s get started:

Buffalo Chicken Dip:
2 cups of shredded chicken (I have been using canned chicken 12.5 oz)
½ cup of Greek yogurt – I prefer 2%
1 block of cream cheese (softened – I usually pop it in the microwave for 30 seconds)
1 cup of blue cheese (You can also use Gorgonzola for a mild flavor too)
½ cup of hot sauce

Directions:
1. Preheat oven to 350
2. Mix all the ingredients together
3. Put in an oven safe dish and cook for 20 minutes
4. Let stand for 10 minutes and server with your favorite side
